A good friend of mine who has a gluten intolerance was able to enjoy baguettes in France because of the high protein content flour they use. She sent me the amazon link of the french flour and the bread turned out great! You should give it a try especially if you can't tolerate regular flour!

3,2,1 French Bread Recipe with French Flour

Ingredients

3 Tbsp sugar

2 Tbsp Yeast

1 Tbsp Salt (I use french salt but any will do)

5 Tbsp (⅓ cup ) butter

2 ½ cups warm water

(Use the Kristi method- boil 1 1/4 cup water in microwave for 2 1/2 minutes - with butter ) then add the other 1 1/4 cup half water.) YOU GUYS!!! I found my favorite pampered chef liquid measuring cup on Amazon after I realized mine is completely falling apart! I'm going to buy myself a new one!!!

6 ½ - 7 cups French flour

Dissolve sugar with hot water and butter in a mixing bowl. (I can't live without my Bosch Mixer for my bread making!) Add the cold water, mix, add yeast and salt. Add 6 1/2 cups flour, scraping down the sides to combine on the second setting of a kitchen aid. Knead for 10 minutes .

Cover the bowl with a kitchen towel and set aside to rise for an hour.

Punch down dough and form into a ball. Split in half and roll the dough out to a rectangular shape and then roll again pinching the seams on the bottom. Repeat other side. Spray baguette baking pan with cooking oil and place loaves on pan. Cut 4-5 slits across the top. Let rise another hour.

Preheat oven to 410 degrees. Bake for 20-25 minutes depending on your oven but don’t over bake! Here's some cute oven mitts

Top with butter across the loaves when out of the oven!

Bon Appetit!
