Delicious "Healthier" Pancakes

These are my "go to" favorite all time pancake" recipe regardless of the healthier title! It truly has such a delicate taste for how much wheat is in it! I love it! I make a batch and then freeze the mixture until I need to make more! It's wonderful that way! So quick and easy!
I've been really trying hard to fuel Craig with nutrients and trying to do that some for myself and the kids too! (In between the comfort foods I want these days- lets be real a good ol homemade chocolate chip cookie hits the spot every time for me ha!)
I woke up craving these this morning and Craig was sure glad I was because he loves them too!

In a medium bowl mix the following ingredients:
2 1/2 cup whole wheat flour ( We grind our own!)
5 Tbsp baking powder
1 tsp salt
3 cups white flour
1/2 cup oatmeal
1 cup wheat germ
For a batch of pancakes making around a dozen depending on the size whisk together:
1 cup pancake mixture
1 egg
1 1/2 cups milk (I like my pancakes on the thinner side but you can use less milk if you want!)
* You can add a TBSP oil if you want to prevent the pancakes sticking to pan but I just butter the skillet as needed.
Heat griddle or pan , add pancake mixture and cook until there are visible bubbles on top of the pancake then you know its time to flip!
Top with your favorite berries, fruit, sliced almonds, and pure maple syrup!
ps Lucy would say add mini chocolate chips to the pancake mixture and top with nutella and strawberries! ha!
